Hailing from Goa, India, this tongue-scorching masterpiece was inspired by the Portuguese dish "carne de vinha d'alhos". Once upon a time, Portuguese sailors used to preserve pork in barrels layered with garlic and red wine. But when this culinary method docked in Goa, local chefs swapped the wine for palm vinegar, added spices, and bam! We got the much easier-to-say dish "vindaloo". Fun fact: despite "aloo" meaning potato in Hindi, you won’t find any spuds in an authentic Vindaloo.
